Pablo Carrion, Senior Research Quality Scientist at Nestle, will share how Nestle and the industry are pushing the frontiers of technology toward a data oriented food safety approach with these tools. The presentation will detail specific research projects aimed at improving our understanding of food quality, but also overcoming food safety challenges as it pertains to detection, identification and characterization of pathogens in food, food production environment and the broader food supply chain.

This series contains five different webinar topics surrounding Whole Genome Sequencing (WGS) occurring once a month from January to May of 2020. WGS is an increasingly valuable tool with a broad scope of applications from food safety management and surveillance to outbreak investigations. The series starts by exploring the basics of whole genome sequencing and how this tool applies to food safety management. In later months, the topic will evolve into sequencing protocols, case studies, regulatory applications and novel applications of the next generation of whole genome sequencing such as metagenomics.
